I was researching some stuff and came upon some good articles pertaining to why fat consumption is a necessary thing for humans.
http://www.stumptuous.com/fat.html - My only disagreement is that saturated fats are "bad". They are as necessary as mono's and poly's, helping to build cells (fat intake shoule be ~1/3 saturated, 1/3 mono-, 1/3 poly).

Another thing I was looking up...soy protein. Found some stuff on the drawbacks of using soy as a source of protein, especially for males. Many protein bars are made with soy as the main ingredient...just something to think about. Soy formula has also been shown to be detrimental to developing infants.
